DANGER IN REUSING COOKING OIL

Many kitchens often see reusing of the cooking oil. It was believed that there was no danger in reusing cooked oil especially vegetable oils. But recent researches have found out that reusing cooked, or boiled vegetable oils again to cook will create big hazard to life.

image A recent study found that a toxin called 4-hydroxy-trans-2-nonenal (HNE) forms when such oils as canola, corn, soybean and sunflower oils are reheated. Consumption of foods containing HNE from cooking oils has been associated with increased risks of cardiovascular disease, stroke, Parkinson'?s disease, Alzheimer's disease, Huntington's disease, various liver disorders, and cancer.

Once absorbed in the body, HNE reacts with DNA, RNA and proteins affecting basic cellular processes. HNE is a well known, highly toxic compound that is easily absorbed from the diet,is highly reactive with proteins, nucleic acids--DNA and RNA. HNE is formed from the oxidation of linoleic acid, and reports have related it to several diseases, including atherosclerosis, stroke, Parkinson's, Alzheimer's, Huntington's and liver diseases.

MORE DANGER SEEN IN FRYING WITH CERTAIN VEGETABLE OILS

Certain researches pointed out that the quantity of HNE is higher in deep fried foods like SNACKS that fried in cooking oils like canola, corn, soya bean and sunflower oils. There is a scientific explanation about this. When fruits or vegetable pieces are boiled inside the oil to get fried, then the oil molecules that penetrated into the fried foods and get converted into similar molecules like that of HNE. While getting cooled to room temperature, this molecule will convert into toxin HNE, which will ultimately lead to risks of cardiovascular disease, stroke, Parkinson's disease, Alzheimer's disease, Huntington's disease, various liver disorders, and cancer.

It was believed that soybean, sunflower and corn oils are good to health but this study proves that there is still some dangers behind.

CONCLUSION:

  • NEVER REUSE COOKED/BOILED OIL
  • REDUCE THE USE OF DEEP FRIED ITEMS IN VEGETABLE OILS

I am guilty! I re-use oil. The problem is that even advertisements promote reusing oils. A brand I know even promotes the usage of used oil up to 7 times.

Knowing about the dangers of reusing items as well as cooking oil is an advantage to us for we will be aware of when it is safe to reuse them. For those who are having difficulty disposing their used cooking oil and grease, we are fortunate these days because there are companies who already collect them especially from restaurants. Thank you for reminding us the dangers reusing cooking oil more than the number of times it is allowed for we need to be very vigilant with the kind of food we eat as well as how they are prepared.
